Baked protein apple

Ingredients:

  • 2 large organic apples
  • ½ a sweet potato, chopped in chunks
  • 1/2 scoop Woman Incredible chocolate or natural protein powder
  • ½ cup coconut milk
  • ¼ cup quinoa
  • 4 chopped dates
  • cinnamon
  • shredded coconut

Method:

Roast sweet potato at 180 degrees Celsius for 50-60 minutes. Mash and set aside. (This could just be leftovers from a previous dinner)

Cook quinoa as you would rice, but in coconut milk (this could also be leftovers, i.e. from a salad). Set off stove and mix through protein powder

Core your apples and get rid of seeds

Stuff apples with equal parts quinoa mix, sweet potato mash, and chopped dates. There should be plenty of mix leftover, which you can just bake on the side as a great side dish to a meal. Sprinkle shredded coconut and cinnamon on top before baking. So yummy!

Bake at 200 degrees Celsius for 30-45 minutes. Serve and enjoy!
