Breaky Muffins

No pastry’ Egg Muffins (makes 10 medium muffins)

  • Tablespoon olive oil
  • 6 eggs
  • ½ cup diced mushrooms
  • ½ cup fresh chopped green vegetables of your choice (zucchini and capsicum are my favourites)
  • ¼ cup chopped leeks or onions
  • 1/3 cup full-fat organic milk (substitute goats or almond if you don’t have dairy)
  • ½ cup of ground flax seed

Method

Cook vegies in olive oil until soft and then reduce heat

Whisk eggs and milk

Add your vegies, and the flax seeds

Grease a muffin tin with organic butter or some olive oil

Fill each muffin cup about halfway

Bake at 180 degrees celcius for approximately 35 minutes

Did you know?

Great to take out and about with you as well! You can add other ingredients such as diced ham or chopped up chicken or turkey. Even try some red meat as a tasty and energising addition!
