Canadian Pancakes

Ingredients

Pancakes

  • 2 whole eggs
  • 2 tablespoons of coconut flour
  • 2 tablespoons of desicated coconut
  • ½ cup frozen organic berries, plus an additional ¼ cup for topping
  • ¼ cup plain almond milk (or rice)
  • Pinch of cinnamon
  • Pinch of nutmeg

Toppings (per person)

  • 2 whole eggs
  • 2 rashers of free-range organic bacon, nitrate free if you can get it
  • 1 banana
  • Maple syrup as needed
  • Cinnamon

Method (pancakes)

  • Whisk all ingredients together
  • Fry in an oiled pan over medium heat
  • Serve with eggs, bacon, banana and maple syrup on top!

Method (toppings)

  • Fry eggs in heated coconut oil, and bacon in its own fat
  • While they are cooking, chop and quickly fry banana in another pan, adding some cinnamon when it’s nice and soft
  • Serve and try not to scoff all at once!
