Easiest Ever Meatloaf

Meatloaf

  • 2 zucchini’s, grated (including skin)
  • ½ an avocado
  • Coloured salt
  • Black pepper
  • Mixed Italian herbs, 1-2 teaspoons
  • 500 grams organic mince
  • 1 egg
  • Almond or hazelnut meal, ½ to 1 cup
  • Water to bind

Mix all ingredients together in a bowl, mashing up thoroughly with a mixture of your hands and a fork/wooden spoon

Cook at 180 degrees for 35-40 minutes

You can sprinkle some grated cheddar or parmesan on top for the final 10 minutes

Covering with foil for the final 10 minutes will add crispness but you will absorb some toxins from the foil – it’s a jugdement call!

This meatloaf goes well with a nice green salad, or on it’s own in cold slices for leftovers, kids lunches, or snacks. Enjoy!
