Gluten Free Pasta with Salmon and Broccoli

Ingredients

  • 250 grams of organic gluten free pasta
  • 2 medium to large sized fresh salmon steaks
  • 1 head of broccoli
  • 1/2 a small tub of black olives
  • Pink salt
  • Real pepper
  • Fresh oregano
  • Parmesan cheese, organic if you can get it
  • 1 jar of organic tomato sauce with garlic, basil etc
  • Crushed garlic
  • Coconut oil

Method

Bring a large pot of water to the boil with a pinch of salt in it. Once it is boiled add the pasta (penne is good), which should cook for 10-15 minutes in total. Be sure to check it after 10 and give a quick stir to separate.

While the water for the pasta is boiling, start making the sauce. Chop the oregano fine, and the broccoli into small chunks.

Heat some coconut oil and then add and quickly stir the crushed garlic. Add some fine chopped fresh oregano to the pan. Add the salmon steaks and cook in plenty of oil for 3-4 minutes each side. Use a wooden spoon to break them up.

Next add the broccoli and black olives, chopped if you like. Throw in the pasta sauce and some salt and pepper. Leave to simmer while your pasta is cooking.

Serve when ready!
