Healthy Snack Sausage


  • 500 grams organic mince beef
  • 500 grams organic mince lamb
  • 1/2 cup chopped parsley
  • 2 flat teaspoons sweet paprika
  • 1 flat teaspoon chili
  • 1 very finely chopped red onion
  • Sea salt to taste
  • Black pepper to taste.

Combine all ingredients and mix well.

Place some foil in a baking tray and then put your sausages mixture on top. Flatten out until it’s an even 2 inches. Place some foil an top of that and then press firmly down so it’s quite compact.

Put the whole tray in the fridge for an hour. When you get it out, slide the foil (and mixture) onto the bench, and then cut it into 2-inch wide stripes. Cut the other way to make 4-inch long sausages, and then separate them to form properly with your hands.

You can BBQ these or pan-fry them with coconut oil for added flavour. They are full of taste and great cold as a snack, or of course as part of dinner!
