Paleo Parmigiana


  • 500 grams organic chicken breasts
  • 200 grams free-range ham
  • Sliced organic cheddar cheese
  • 1 cup almond flour
  • 2 eggs
  • 1 or 2T dried herbs – thyme, basil, parsley, etc
  • 2t cumin
  • 1t garlic powder
  • Coconut oil, lard or butter
  • 100ml milk


Soak chicken (filleted in thin halves first) in milk for 2-3 hours. Combine all dry ingredients in a bowl.

Coat soaked chicken in lightly beaten eggs, and then roll in dry mixture. Cook in heated coconut oil in a pan, and then place in a baking tray. Add ham and cheese (to taste) and bake at 180 celsius for 10 minutes.

Serve with a fresh green salad.
