Quick Cajun Feast


  • 500 grams diced chicken breast
  • 10 grams organic butter
  • 1 whole onion, chopped
  • Small punnet mushrooms, chopped
  • 1 green or red capsicum, chopped fine into squares
  • 1 teaspoon of garlic
  • 3 teaspoons mixed Cajun spices
  • Additional chilli as preferred
  • 1 whole avocado
  • ½ punnet cherry tomatos, chopped fine
  • 1 lemon
  • Coloured salt
  • Black pepper


Melt organic butter in pan

Add garlic and spices, and mix around for 30 seconds

Add chopped onion and other vegetables

Allow to soften, using additional butter if needed

Add diced chicken and cook thoroughly

Squeeze some lemon (or lime if you have it) over the mix, and stir through

You can salt as you cook, or use later after serving

Serve with guacamole on the side. You can use black beans for a carb-boost if desired; tinned organic ones are best and they can be served cold or warmed in a saucepan with a little water.
