Quick’n’Easy Gluten-free Pizza

Ingredients

Crust

  • 2 cups almond or hazelnut meal
  • 2 eggs, whole
  • 3 tbsp olive oil
  • ¼ tsp baking soda
  • 1 tsp garlic powder
  • 1 ½ tbsp fresh rosemary chopped

Topping

  • 1 cup organic napoletana sauce, preferably sugar-free
  • 2 chopped organic pork or beef sausages
  • One chopped spring onion
  • 3 green onions chopped
  • Handful of torn basil leaves
  • 2 small tomatoes diced
  • 1/2 cup roasted red capsicum diced
  • Handful of sliced black olives

Method

Preheat your oven to 180 degrees celsius

Mix all crust ingredients in a bowl, and then use your hands to make it into a ball

Lightly grease a pizza tray with organic butter

Place the dough ball in the middle and gently push it into a thin circle, about 12 inches across

Bake this for 20 minutes and then remove from oven

Cook sausage lightly in a butter-greased pan

Coat pizza crust with tomato sauce and then spread all your toppings over

Bake again for another 25-30 minutes

Delicious either hot or cold, and a greens side salad is a must!
