Goat Cheese and Chia Scramble
- 3 organic (whole) eggs
- 10 grams full-fat cream, organic
- 15-20 grams of goats cheese ‘chevre’, or regular fetta (full-fat, organic)
- 2 teaspoons chia seeds
- Fresh parsley
- Organic butter, 5-10 grams
- Cup of baby spinach or wild rocket leaves
Whip eggs and cream with a fork. Add some pink or grey salt and some black pepper.
Add goats cheese and break it up a little bit. Stir in your chia seeds.
Heat butter in a pan until it is very hot. Avoid non-stick pans as they leak toxins. Add whipped egg mix – it should fluff up and cook within seconds.
Almost immediately after you put the egg mix in the pan, add the baby spinach. You don’t need to cook it completely.
Serve right away, with some fresh parsley on top. You can add some gluten free bread or if you feel you need the carbs, but this breaky is designed to sustain you for hours as is.
