Refreshing Chicken Salad


  • 150 grams chicken breast, chopped into large slices
  • Coconut oil
  • 1/3 an avocado
  • 1 cup of mixed lettuce
  • ½ cup of raddichio
  • 2 slices of prosciutto, chopped
  • ½ cup blanched snowpeas
  • ½ a lime
  • 30 grams of fetta or goats chevre


Using a moderate heat, fry chicken breast in coconut oil. Move it around regularly or it may stick. Add prosciutto into pan for the last 1-2 minutes. Set aside once done.

Tear lettuce and raddichio with your hands, and wash. Place in large salad bowl.

Chop blanched snowpeas and add to lettuce mix.

Mix chicken and prosciutto through lettuce (you can do this while still warm, or you can let it cool completely first)

Add cubes of avocado, chunks of fetta, and squeeze lime over top.

Serve with some extra virgin olive oil or macadamia nut oil
